Breakfast is always a struggle in our house. This morning I was inspired to play around with breakfast bars, and this was the delicious conclusion my 3 year old and I came up with. Enjoy!
Blueberry Almond Bars
- 1/2 cup peanut butter
- 1/4 cup agave
- 1 cup dried blueberries
- 1 cup almond flour
- 1/4 tsp sea salt
- 1/2 cup dried coconut
- 1/2 cup walnuts (chopped)
- 1/2 cup pumpkin seeds
- 1/3 cup coconut oil, melted
- 1/2 tsp baking soda
Place almond flour, coconut, salt, and baking soda into a large bowl and mix. Add the rest of the ingredients and mix well. Oil an 8 x 8 pan with coconut oil and press the mixture firmly into the base.
Bake at 350 degrees for 18-20 minutes. Cool in the fridge for at least an hour before cutting to give them time to set.
I tried making these bars but they were crumbly…is the melted coconut oil for greasing the pan or is it added into the bars…I assumed since it was listed last that it was for greasing the pan, but now am wondering if it should be put into the bars?
It was meant to be put into the bars! I see how I may have unintentionally led you astray. I’ll put it in the middle of the ingredient list so hopefully we can avoid someone else making the same mistake. I suppose you can eat it like granola?
